Eternal stress inducing prompt for some. Let’s be honest, it happens to everyone, even Chefs and serial home cooks!
This week recipe is all about convenience, simplicity and comfort. You really just need 5 ingredients, that you may very well have already. The other ingredients are totally optional.
Makes 2 big servings or 4 small bowls you can serve along some grilled cheese!

5 Ingredients Tomato Soup
- In a large saucepan on medium heat, pour the olive oil. Cook the onions for about 5 min, until just soften and lightly colored. If using garlic, add then and cook for another minute
- Add broth or water, can of tomatoes with their juices, and 1/2 teaspoon of salt. Add dried herbs is using. Bring to a simmer. Cook on low, uncovered, for about 30 minutes. Stir occasionally.
- Using an immersion blender, smooth the soup. If using a blender, make sure it can handle hot liquid, or wait for soup to be cooled before processing. Add heavy cream if you want a creamy tomato soup. Add pepper and more salt if desired.
- Serve hot, plain or with cheese, croutons on top. Serve along with a grilled cheese for a super comforting meal!
