2big handfuls of chopped greenskale, spinach, mustard green
1.5tspfresh gingerfinely chopped
1lbraw and peeled shrimps
4green onionschopped (optional)
In a medium-large pot, heat oil over medium heat. Add onions and cook until soft but not brown.
Add 5 cups of water, salt and fish sauce. Bring to a boil and simmer for 5 min.
Add the chopped greens and cook just until wilted, 3 minutes.
Add ginger and shrimp and cook, still with water simmering, for a couple minute. Then turn off the heat, cover with a lid and let sit for 10 minutes.
season with additional salt or fish sauce if you want. Serve with chopped green onions and crispy shallots.
You can replace the shrimps with tofu, pieces of white fish or chicken.If you want to add rice noodles, cook them separately and add them to each individual bowls, before adding the broth. This will ensure a nice clear broth.
