This was such a knock off!!! No boring cauliflower here! Inspired from a recipe I ran accross on the web and made a few modifications... This is will be on the dinner menu more often!
Freshly homemade chimichurri is the best of course, but if you don't have all the ingredients on hand, we do have a really decent one in the jar that's shelf stable and always ready to go!
Boil water in large pot, big enough to fit the whole cauliflower head. Add a pinch of salt. Remove all leaves from the cauliflower. Cook it in boiling water for 6 min, until just tender. Drain the water and let it sit on paper towel for a few minutes to dry.
Place the cauliflower on a baking tray and drizzle the olive oil all over it. Rub some Maldon salt on it. Bake for about 40 minutes, until golden all around. Take it out and let rest for 5 minutes.
In the meantime, prepare the yogurt sauce: just add to the yogurt the pressed garlic, lime zest and juice, pepper and cumin, mix.
Just before serving, pour the yogurt sauce all over the cauliflower. Then top with 1 or 2 Tbsp of chimichurri, to your liking. Enjoy right away!
