I usually just crush them on a piece of bread with butter and a few capers.
But if the look of the fish is a tun off, this recipe will certainly help you get over it!
This is a great dish for entertaining, or for a quick protein rich snack on crackers! make it once and keep in in the fridge for up to 4 days.
Remove the sardines from the cans. Carefully open each one down the belly and back, folding them open to expose the backbone. Remove and discard the bones. Cut away and discard any tails. Set aside.
Place the cream in a medium bowl, add the now boneless sardines. Fold and stir with a rubber spatula until smooth. This can be done in food processor.
Then add the scallions, fresh herbs, and most of the lime or lemon juice, mixing into the cheese with the spatula.
Add cayenne, salt, and pepper to taste. Add more lime or lemon juice to taste.
Serve right away or chill. Spread on crackers, bread or alongside crudites.
