Seafood Pasta with Prawns and Lobster Oil

Seafood Pasta with Prawns and Lobster Oil

Ingredients
- 4 tbsp extra virgin olive oil divided

16 fresh large prawns, peeled but tails on, deveined
- 1 garlic clove halved

16 cherry tomatoes halved
- Salt to taste

Handful of pistachios
-
Lobster oil to drizzle
-
360 pasta of your choice
-
freshly grated parmesan (optional)
Directions
Roughly blend the pistachio and keep aside.
Sauté the halved garlic clove with extra virgin olive oil for 1 minute. Add the halved cherry tomatoes and salt. Crush the tomatoes with a wooden spoon and cook for 3 minutes on low. After 3 minutes put the fire off.
Cook the pasta according to the package instruction.
In the meantime, sear the prawns in a hot skillet with the remaining extra virgin olive oil. Cook them for about 2 minutes per side, just make sure they turn pink and become just golden brown on the outside but still soft. Season with salt and pepper.
Mix the drained pasta with the cherry tomato sauce. Serve with the pistachio crumbs and seared prawns on the top.
Drizzle with some Lobster Oil and eat immediately.
Add grated parmesan over everything if you wish.
