Preheat your oven to 375°F (190°C).Line a 9-inch pie dish with the pie crust and prick the bottom of the crust with a fork. Bake for 10 minutes, then remove from oven and set aside.
In a medium bowl, whisk together the eggs, heavy cream, salt, black pepper, and dried thyme.
In a separate bowl, mix together the smoked artichoke hearts, mozzarella cheese, ricotta cheese, and grated Parmesan cheese. Spread the artichoke mixture evenly over the bottom of the baked pie crust.
Pour the egg mixture over the top of the artichoke mixture, making sure to fill any gaps.
Bake the pie for 35-40 minutes, or until the center is set and the top is golden brown.
Remove from the oven and let cool for 10-15 minutes before serving.
