Madras curry powder is from Southern India. This blend contains a thickening agent, chickpea flour, to thicken finished dishes. Madras Curry Powder is traditionally used in chicken stew and is a wonderful fragrant addition to fish and shellfish curries. It is also superb for vegetable curries including cauliflower and eggplant.
